Raw fruits, vegetables, nuts, and seeds are the most nutrient-dense foods on the planet, right? So why, when we enter our diets into nutrient-tracker websites and software, do we come up short in a number of key nutrients?

The threat of B12 deficiency remains one of the great stumbling blocks for raw vegan, cooked vegan, and even SAD dieters, and for good reason. A deficiency can cause permanent damage to the brain and body, but the science behind how we reach that state is so vague as to be almost useless.

After three and a half years of only eating raw fruits and vegetables, I should be deficient by the reckoning of many researchers.

After being badgered for years about the threat to my health, I finally gave in and got a blood test.
