    Are all corn species “eatable” in the raw state? Is there any kind that would be more starchy or not too sweet?

  2. Hi Francisco.

    All sweet corn will work, so long as it’s freshly picked.

    There are many kinds of corn which are not sweet and not ideal for eating raw. These are sometimes called field corn or just plain “maize”.

    Just stick to the sweet corn.
